Roasted Brussels Sprouts with Maple Cranberry Glaze and Toasted Hazelnuts





This dish marries the savory, caramelized flavors of roasted Brussels sprouts with a maple cranberry glaze that’s both sweet and tangy. Toasted hazelnuts add a delightful crunch and nutty depth, while a hint of orange zest brings it all together with a touch of brightness.   • 1 ½ lbs Brussels sprouts, trimmed and halved

  • 2 tbsp olive oil

  • Salt and freshly ground black pepper, to taste

  • 1/2 cup fresh or dried cranberries (if using dried, soak in warm water for 10 minutes, then drain)

  • 1/4 cup pure maple syrup

  • 1 tbsp balsamic vinegar

  • 1/2 cup toasted hazelnuts, coarsely chopped

  • Zest of 1 orange (optional, for an extra festive flavor)

  1. Prepare the Brussels Sprouts: Start by preheating your oven to 400°F (200°C). On a baking sheet, toss the halved Brussels sprouts with olive oil, a pinch of salt, and some freshly ground black pepper.   2. Roast the Brussels Sprouts: Roast the Brussels sprouts for 20-25 minutes, stirring once halfway through, until they’re golden brown and crisp around the edges. The roasting process brings out their natural sweetness and makes them tender on the inside.

  3. Make the Maple Cranberry Glaze: While the Brussels sprouts are roasting, prepare the glaze. In a small saucepan over medium heat, combine the cranberries, maple syrup, and balsamic vinegar. Bring to a gentle simmer, allowing the cranberries to soften (if fresh, they should start to burst) and the flavors to meld. This will take about 5 minutes. Remove from heat and set aside.

  4. Assemble the Dish: Once the Brussels sprouts are done roasting, transfer them to a serving bowl. Pour the maple cranberry glaze over the top, gently tossing to coat each sprout with that rich, sweet-tangy goodness.
