Protein Snack: Energy Balls





Ingredients:

  • 1 cup gluten-free oats

  • 1/2 cup almond butter (or any nut/seed butter)

  • 1/4 cup honey or maple syrup

  • 1/4 cup ground flaxseed

  • 1/4 cup vegan protein powder (optional for extra protein boost)

  • 1/3 cup dark chocolate chips (dairy-free)

  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, mix together all the ingredients until well combined.

  2. Scoop out about 1-2 tablespoons of the mixture and roll into balls.

  3. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.

  4. Store the energy balls in an airtight container in the fridge for up to a week.

These energy balls are great for a quick, protein-packed snack that you can take on the go. Enjoy!
