High Protein, High Fiber Detox Salad



Ingredients:

  • For the salad:

    • 1 cup cooked or canned chickpeas (drained and rinsed)

    • 1 cup cooked or canned kidney beans (drained and rinsed)

    • 2 cups cooked chicken breast, shredded or chopped

    • 2 medium beets, roasted and diced

    • 4 cups mixed salad greens (e.g., arugula, spinach, kale)

    • 1/2 cup cucumber, sliced

    • 1/2 cup cherry tomatoes, halved

    • 1/4 cup red onion, thinly sliced

    • 1/4 cup chopped fresh parsley or cilantro (optional)

    • 1/4 cup pumpkin seeds or sunflower seeds (optional)

  • For the dressing:

    • 1/3 cup Trader Joe’s Dill dressing

    • 1 tablespoon lemon juice (optional, for extra brightness)

    • Salt and pepper to taste

Instructions:

  1. Prepare the Beets: Preheat your oven to 400°F (200°C). Wash and trim the beets, then wrap them in aluminum foil. Roast the beets for about 45-60 minutes or until tender. Once cooled, peel and dice the beets.

  2. Prepare the Chicken: Cook the chicken breast by grilling, baking, or boiling it until fully cooked and no longer pink inside. Let it cool slightly, then shred or chop it into bite-sized pieces.

  3. Assemble the Salad:

    • In a large salad bowl, combine the mixed salad greens, chickpeas, kidney beans, diced beets, cucumber, cherry tomatoes, and red onion.

    • Add the shredded or chopped chicken and gently toss to mix.

  4. Add the Dressing:

    • Drizzle the Trader Joe’s Dill dressing over the salad. You can also add a squeeze of lemon juice for a brighter flavor if desired.

    • Season with salt and pepper to taste.

  5. Garnish: Sprinkle the chopped fresh parsley or cilantro and the pumpkin seeds or sunflower seeds over the top of the salad.

  6. Serve: Serve immediately and enjoy your high-protein, high-fiber detox salad!
