Ingredients:
For the salad:
1 cup cooked or canned chickpeas (drained and rinsed)
1 cup cooked or canned kidney beans (drained and rinsed)
2 cups cooked chicken breast, shredded or chopped
2 medium beets, roasted and diced

1/2 cup cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced

1/3 cup Trader Joe’s Dill dressing
1 tablespoon lemon juice (optional, for extra brightness)

Instructions:
Prepare the Beets: Preheat your oven to 400°F (200°C). Wash and trim the beets, then wrap them in aluminum foil. Roast the beets for about 45-60 minutes or until tender. Once cooled, peel and dice the beets.
Prepare the Chicken: Cook the chicken breast by grilling, baking, or boiling it until fully cooked and no longer pink inside. Let it cool slightly, then shred or chop it into bite-sized pieces.
Assemble the Salad:
In a large salad bowl, combine the mixed salad greens, chickpeas, kidney beans, diced beets, cucumber, cherry tomatoes, and red onion.
Add the shredded or chopped chicken and gently toss to mix.
Add the Dressing:
