Ground Beef Vegetable Soup



Ingredients:

  • 1 pound ground beef

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 4 cups beef broth (check for gluten-free)

  • 2 cups water

  • 3 medium potatoes, peeled and diced

  • 2 cups summer squash, peeled and diced

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • 1 cup green beans, chopped

  • 1 teaspoon dried thyme

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • 2 tablespoons olive oil


Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.

  2. Add the diced onion and minced garlic to the pot and cook until the onion is translucent, about 5 minutes.

  3. Pour in the beef broth and water, stirring to combine.

  4. Add the diced potatoes, butternut squash, carrots, celery, and green beans to the pot.

  5. Stir in the thyme and basil, and season with salt and pepper to taste.

  6. Bring the soup to a boil, then reduce the heat and let it simmer for about 30-40 minutes, or until the vegetables are tender.

  7. Adjust seasoning if necessary and serve hot.
