Fiesta Burger Bowl Recipe

Ok, so can I be honest? I used to hate the word SALAD. UGH. It used to make me cringe. It reminded me of times as a child where I thought I was being punished. Everyone else was eating McDonald's french fries and my parents forced me to eat a nasty McDonald's salad. It also reminds me of eating and still starving afterwards because the Iceburg just didn't do it for me.


But, as I have continued to heal, I have found what works for me: Protein veggie bowls

There are endless options and variations, depending on your nutrition needs.


Here is one of my favorite BOWL recipes. If you are ok with the word, salad, and that makes you feel like you are on point with your health journey, call it that. But, I will reference it here as a bowl. 😁





Ok, I know you are ready for the recipe so here it is:



Fiesta Burger Bowl Recipe:


1 T. GRASS FED BUTTER

1 TSP. OF SMOKED PAPRIKA

1 TSP. OF FIESTA SEASONING

1 CHOPPED PURPLE ONION

1 LB. GRASS FED BEEF

3 CUPS OF GREENS (LETTUCE, SPINACH, ETC)

1 CUP OF CHERRY TOMATOES

1 SLICED AVOCADO

1 T. of Avocado/Flaxseed/Olive Oil

1 T of Salsa (make sure it's organic and free of sugar)

DASH OF HIMALAYAN SALT

OPTIONAL: PICKLES, CHEESE, SOUR CREAM, SALSA, JUICE OF 1 LIME


DIRECTIONS:

  • saute the butter, paprika, and fiesta seasoning in a pan on medium high.

  • Add in the onions and stir until onions are soft.

  • once onions are soft, add in hamburger meat and brown the meat with the onions and seasoning.

  • wash and chop greens, tomatoes and add to the serving bowl.

  • once meat is brown, add meat to the bowl of veggies.

  • peel and slice the avocado and add to the bowl with the meat and veggies.

  • top with dressing.

  • add optional items as desired.
