These egg bites are Dairy-Free and Gluten-Free.
Ingredients:
6 large eggs
1/4 cup unsweetened almond milk (or any other dairy-free milk)
1/2 cup vegan feta cheese, crumbled
1/2 cup spinach, chopped
1/4 cup red onion, finely diced
1/2 cup mushrooms, finely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
Instructions:
Preheat your oven to 350°F (175°C). Grease a muffin tin with a little bit of oil or line it with silicone muffin liners.
In a large bowl, whisk the eggs and almond milk together until well combined.
Stir in the vegan feta cheese, spinach, red onion, mushrooms, salt, pepper, garlic powder, and dried oregano.
Pour the egg mixture evenly into the muffin tin cups, filling each about 3/4 full.
Bake in the preheated oven for about 20-25 minutes, or until the egg bites are set and lightly golden on top.
Let them cool in the muffin tin for a few minutes before removing. Enjoy warm, or let them cool completely and store in the fridge for a quick and easy breakfast or snack later on.
