Recipe: Gluten-Free & Dairy-Free Autumn Harvest Flatbread

Serves: 4

Ingredients:

  • 1 tbsp extra-virgin olive oil, plus more for drizzling

  • 3/4 cup thinly sliced shallots

  • 8 ounces mild or spicy ground turkey sausage (or plant-based sausage)

  • 4 gluten-free naan or flatbreads

  • 1 cup canned pumpkin puree

  • A pinch of ground cinnamon and nutmeg

  • A few pinches of dried thyme or rosemary

  • 4 to 5 ounces vegan mozzarella or vegan Fontina cheese

  • 2/3 cup dairy-free ricotta (e.g., almond-based)

  • 2 to 3 tbsp fresh sage leaves

  • Hot honey (or agave nectar with a pinch of chili flakes) and cracked black pepper for garnish

How to Make It:

  1. Prep the Toppings Preheat your oven to 425°F. In a skillet over medium heat, warm 1 tbsp olive oil. Add the thinly sliced shallots and cook until softened and caramelized, about 5 minutes. Add the ground turkey sausage, breaking it up into crumbles as it cooks, and continue cooking until browned, about 6-7 minutes.

  2. Assemble the Flatbreads Arrange gluten-free naan breads on a large, rimmed baking sheet. Spoon the pumpkin puree evenly over each naan, spreading it with the back of a spoon. Sprinkle with a pinch of cinnamon, nutmeg, and dried thyme or rosemary for that cozy autumn vibe.
